Chocolate Cream Pie (yes it’s diet)

Everytime I crave something sweet I think “Thank you Splenda™. This is a pretty good substitute if you love cream pie. I didn’t give it five stars only because it does have a little of that strange “sweetner” enhanced taste. But it will keep you from running to the real thing!

Recipe: Chocolate Cream Pie

Ingredients

For the crust:

  • 1 1/2 cups Almond Meal (flour)
  • 3 tablespoons butter (or substitute) – melted
  • 2 tablespoons Splenda™

For the pie filling:

  • 1 can evaporated skim milk
  • 1/4 cup Splenda™
  • 2 tablespoons unsweetened cocoa
  • 1 teaspoon instant coffee
  • 1/8 teaspoon salt
  • 1 package unflavored gelatin
  • 1/4 cup of water

Instructions

  1. Preheat the oven to 350 degrees.
  2. Soften the unflavored gelatin in the water and set aside in a small bowl.
  3. Mix the almond flour and Splenda together in a small bowl. Add the melted butter and stir with a fork until well mixed. Pat this mixture into a 9 inch pie pan. Bake for 11 minutes in the oven until just slightly brown. Begin watching the crust at 10 minutes and check every additional minute to avoid burning.
  4. Let the crust cool while you make the filling.
  5. Mix the first 5 ingredients in a saucepan on the stove over medium heat until blended. Bring this mixture just to a boil and remove from heat. Stir in the gelatin mixture until dissolved. Remove to a bowl and chill in the refrigerator until slightly congealed (about 45 minutes).
  6. Pour the mixture into the pie shell and cover with plastic wrap touching the filling to prevent a skin from forming.
  7. Serve with 1 tablespoon of sugar free whipped cream and a strawberry garnish. Pie serves 8.

Calamity Jane hits the kitchen

I’m not a great cook and I don’t profess to even have aspirations beyond just being a competant home cook. Tonight I’m cooking for my best friends who are going to a Spring Training game (Yankees versus someone). Every Wednesday night for the last six months Fran has made dinner for us. Her batting average for “great meals” is about 80 percent, but since they will be out in the field until 5 pm, tonight is my turn.

The goal of our Wednesday night dinner is Good Food & Good Company, and one of the key rules is South Beach Diet friendly. Tonight I’ve taken some liberties in the meny planning, but here’s what I’ve got:

Why I labeled this Calamity Jane

In my experience, whenever I have to serve food to people other than my immediate family, something is always wrong. My family, bless their hearts, will eat anything and proclaim it great simply because they didn’t have to make it. My mother is 82 years old and she’s grateful just not to have to cook herself.

But Fran — she’s a perfectionist. So I’m cheating. The eggplant parmesan was cooked a month ago and frozen (I had two dishes of this and one I heated last night and fed to my family so we could be sure it was good). It looks lovely so I don’t have to worry about that. Rotisserie chicken from the store — well it looks great because otherwise no one would buy it.

The brownies are the big question for tonight. They taste okay because I made them last night and fed them to my family in a test run. The concern is — black beans. The fiber content in this meal is huge and it is my general belief that you should not send your guests running to the bathroom with the gutteral erruption from excess fiber. I’m keeping my fingers crossed that this isn’t my Calamity Jane moment.
